Eligibility Criteria

Candidates must meet the following educational and age requirements to be considered for the Senior Research Fellow position.

Essential Qualifications:

• Master's degree in Food Technology, Food Science and Nutrition, Food and Nutrition, Biochemistry, Toxicology, or other allied sciences.
• PhD in the mentioned discipline and publications in peer-reviewed journals.

Desirable Qualifications:

• Laboratory animal handling and hands-on experience in working with in-vivo and ex-vivo models.
• Minimum 2 years of experience working on a similar kind of project.
• Good knowledge of handling MS Office and statistical analysis tools.
• Good communication skills, preferably in Hindi and English.

The maximum age limit for candidates is 35 years.

Relaxation of 5 years is applicable for women, SC, ST, OBC, and differently-abled candidates as per the Government of India Rules.

Salary / Emoluments

The selected candidate will receive emoluments of Rs. 42,000 per month plus 10% House Rent Allowance (HRA).

The tenure of the fellowship is co-terminus with the project, whichever is earlier.

Selection Process

Only short-listed candidates will be called for an interview.

Candidates should appear for the interview with their original certificates and other relevant documents.

No TA/DA will be provided for attending the interview.

Roles and Responsibilities

The Senior Research Fellow will be involved in various aspects of the project, including:

• Product Development & Characterisation: Preparing composite flours and food prototypes with partially hydrolysed guar gum; conducting physicochemical and nutritional analyses.
• Analytical Techniques: Performing laboratory characterisation using FTIR, DSC, GPC, solubility/viscosity tests, fibre content, and prebiotic index evaluation.
• Shelf-life & Sensory Studies: Conducting texture analysis, sensory evaluation (hedonic scale), and monitoring shelf-life under ambient and accelerated conditions.
• In Vitro & Ex Vivo Assays: Carrying out enzyme inhibition assays, glycaemic index evaluation, cell culture studies (glucose uptake, insulin signalling, antioxidant activity), and intestinal loop/everted sac models.
• In Vivo Animal Studies: Induction of diabetes in animal models, monitoring metabolic parameters (blood glucose, insulin, lipid profile, HbA1c), and assisting in histological and biochemical analyses.
• Documentation & Reporting: Maintaining detailed records of experiments, preparing data reports, and contributing to publications and project deliverables.
